Urad Dal vada is mostly prepared on all auspicious occasions in South India.no one could say no to these vadas.everyone wants to have them.but making urad dal vada is still a dream for few busy people as it involves a lot of work and little skill in preparing the batter.
these vadas are instant.means, no hours of soaking and grinding are required.this would really be helpful for working women and bachelors.For this recipe, you need to rinse the Urad dal/black gram first.they need to be rinsed through a strainer under running water very quickly.this is to prevent them from soaking.later they should be kept under sunlight until completely dry.if you have no sunlight available then you can keep them under a fan.
once the urad dal/black gram becomes dry, grind them into a fine powder.you can prepare 1 to 2 kg of this powder at a time and store in an air-tight container.put some cloves and a bay leaf to prevent them from weevils or bugs.use the powder when required.
preparing the batter is the very important step in this recipe.the batter should be neither too hard nor too runny.i.e it should be soft(to touch) but still hard enough to pat vadas. you need to add the water little by a little while mixing the batter.leave the batter for 1-2 hours in normal weather and overnight in extreme cold weathers.keep the batter in the oven with just the lights ON.do not add onions if you are soaking for a longer time.you can add them just before making vadas.
the batter may become little hard after 1 hour as it is prepared with dry urad dal/black gram powder.so add a little water for proper consistency.mix the batter for once before making vadas.dip your fingers in water before you pat each vada.
after frying the first batch vadas, if you find them hard, you can add very little water to the batter.then the vadas will come out very soft and fluffy inside and crispy outside.you can serve them with coconut&peanut chutney and Sabmbar.you can save some and make Dahi Vadas.try and enjoy this wonderful recipe.Happy cooking….. 🙂

Text version of Instant Urad dal Vada
Medu vadas made with instant Vada powder.no hours of soaking and grinding are required.
- 150 grams urad dal/black gram , skinless
- water as required
- 1 tsp baking soda
- salt as per the taste
- 1/4 cup chopped onions
- 1 tbsp chopped green chilies
- 1/4 inch ginger
- 1/4 cup coriander chopped
- 1 sprig curry leaves
- 1 tsp cumin seeds
- oil - for deep-frying

rinse black gram under running water very quickly.

don't let them be in the water for more than a minute.

put them on a clean, dry fabric and pat dry.

keep under sunlight until they are dried out completely.

take the black gram into spice grinding jar and make into powder.

powder shouldn't be either too fine or too coarse.

take a mixing bowl, add black gram powder, salt, baking soda, chopped green chilies, ginger, coriander, onions, curry leaves, cumin seeds and mix well.

add water little by little until the batter reaches to a proper consistency.i.e the batter should be neither too runny nor too hard.

leave it for 1 to hours.or overnight in extremely cold weather(in the oven with just the light ON).

later mix the batter for once and add a little water to adjust the consistency.

heat oil for deep-frying.

when the oil is hot, dip your fingers in water, take a small portion of batter, make into flat round shape.

make a hole in the middle with your finger and drop into the oil carefully.

fry 4-5 vadas in one batch.fry on medium heat until the vadas turn into nice golden brown color.

take them onto a paper towel to drain out the excess oil.

repeat the process until the batter is finished.

A good idea but I want a clarification. In the video you are taking 200 gms.of dal and 1 tsp baking soda. Whereas in the written link it is 150 gms dal and 1 tsp baking soda. Could you please clarify so that everything goes right when I prepare this

Thank you.you can take as much quantity as you need.like 500 grams to 1kg or whatever.you need to grind it into a very fine powder and store the powder in an airtight container and use the required qty(like 150 or 200 g) whenever you want to make vadas.but add 1 tsp of baking soda for every 150 grams of urad dal.make sure that the powder very finely ground.
