Though there are many recipes with Egg,I prefer cooking this because it’s my daughter’s favourite..Most of the Andhra people use jaggery or sugar to balance the dominating sourness of the tamarind juice.whereas Telangana people don’t.
My husband belongs to Telangana and I’m from Andhra.First time, when he saw me adding jaggery to this recipe he asked me sarcastically “is this a curry or a sweet?”. I didn’t answer him.But when he ate this he liked it very much.Every region has its own way of cooking.I will also post that Telangana type curry in a few days which is also delicious.

Egg curry with sweet Tamarind gravy.Tanginess of the tamarind and sweetness of the jaggery makes this recipe very special.
Ingredients
- onions(big) – 4
- green chillies – 3
- curry leaves
- salt to taste
- turmeric powder – 1/4 tsp
- chilli powder – 1 1/2 tsp
- boiled eggs – 4
- jaggery – lemon-sized
- oil – 4 or 5 tbsp
- Tamarind juice – 2 cups
Instructions
- first take boiled eggs and make slits with knife like this and keep them aside.
- after that put oil in a pan,add onions,green chillies fry the onions till they become transparent and soft.
- add a little turmeric,and chilli powder ,mix it well.
- add curry leaves and eggs.mix it again .
- let it be on low flame for 2 to 3 minutes so that the eggs could absorb all the flavours.
- then add tamarind juice and jaggery and cook till the oil oozes out.
Notes
1.here you can also use sugar instead of jaggery.[br]2.If you are using sugar add 2 tbsp.[br]3.don’t add much jaggery.It is added to just balance the sourness.
