Chicken noodles with mustard sauce and honey-Foodvedam

Ingredients
- For boiling noodles
- plain noodles – 150 grams
- water – enough
- salt – to taste
- oil – 2 tsp
- For frying chicken
- chicken(thigh piece) – 150 grams
- oil – 2 tsp
- salt – to taste
- black pepper powder – 1/4 tsp
- For making noodles
- red/green/yellow bell peppers – Julienne 75 grams
- chopped garlic – 1 tbsp
- chopped ginger – 1 tbsp
- chopped spring onions – 3 tbsp
- salt – to taste
- pepper – 1/4 tsp
- red chili sauce – 1 tbsp
- vinegar – 1 tbsp
- mustard sauce – 1/2 tbsp
- honey – 1 tbsp
Instructions
Shallow frying chicken
- heat oil in a skillet.
- add chicken thigh pieces and fry for 2 minutes.
- add little salt and 1/4 tsp of black pepper powder and toss.
- cover and cook for 10 – 15 minutes on simmer.
Boiling plain noodles
- take a heavy bottomed vessel.
- fill half of the vessel with water so the noodles could move freely at the time of boiling.
- keep the vessel on high flame and bring water to boil.
- when the water starts to boil,add 2 tbsp of oil and salt.water should taste salty.
- leave the plain noodles into it carefully.
- water stops to boil for few seconds after adding the noodles.
- do not try to touch the noodles with ladle until the twined noodles separate themselves.
- when the water starts to boil again just mix the noodles for once carefully.
- boil for 3 minutes from the boiling point and turn off the heat.
- strain out the water from noodles immediately to stop them further cooking.
- keep the strainer under running water for 2 seconds.
Cutting vegetables
- cut the bell peppers into Julienne.
- chop ginger, garlic, and spring onions and keep aside.
Cooking chicken noodles
- heat 2 tsp of olive oil in a pan.
- add chopped garlic, ginger, spring onions, a pinch of salt, and 1/4 tsp of pepper powder, and sauté for a minute.
- add red chilli sauce, vinegar, and mustard sauce and mix well.
- add shallow-fried chicken pieces and mix again.
- next, add 1 tbsp of honey and cook for 2 minutes.
- add boiled plain noodles and mix them up.
- cook for 2-3 minutes.
- garnish with chopped spring onions and serve hot.
Notes
1. Keep in mind that the noodles are already cooked in salt water. and the sauces used also contain salt. so add very little salt to this preparation.
