Chili Flakes are usually used in cooking pasta, soups, pizzas, and sausages etc..whereas in India.specially in Andhra Pradesh, they are used in cooking vegetable fries like bhindi fry, tindora fry, cluster beans fry etc.
These chili flakes are called as GODDU KARAM in Andhra Pradesh. Andhra people use freshly pounded chili flakes for seasoning vegetable fry recipes. Nice aroma of curry leaves, pungent flavor of garlic and spiciness of red chilies enhances the taste of the recipes. and tastes even better when pounded in a stone mortar with pestle.it is prepared in very small quantities at a time as curry leaves and garlic contains little moisture.
Using stone mortar is a dream for city people as we live like caged birds. and the angry birds in the ground floor could not bear the sounds 😉 :-). but I have a very small stone mortar.

Text version of chili flakes
- 10 Dried red chilies
- 1 tsp cumin seeds
- 4 to 5 garlic cloves
- 1 sprig curry leaves

sauté all the ingredients till you get a nice flavor.

red chilies should become crispy.

put them together in a spice grinder and make into a coarse powder.
store it in an airtight container. could be used in vegetable fries like bhindi fry, ivy gourd fry(Tindora), cluster beans fry etc.
